Thanks Chelle. Tonight dh pounded out some chicken breasts and stuffed with parmesan, mozzarella, pecorino, provolone and romano cheese as well as spinach that had been sauteed in minced garlic and onion. Rolled the breasts, then coated with Italian bread crumbs, baked and served sliced into pieces along with an orzo (rice shaped pasta) made with sauteed carrots, asparagus and brocolli.
