Thread: Cooking meals in Aruba

    Over the last few weeks, I made some double batches of dinners.
    Packed the following in lock and lock, FROZE and have the following dinner for 2 while we are in Aruba.
    - leftover Easter dinner Ham, green beans, mashed taters enough for 1 meal for the each of us.
    - baked stuffed chicken breast, with brocolli, red peppers and rice. enough for 1 meal.
    - chicken cacciatore' with zucchini and yellow squash and sauce. enough for 1 meal

    also too, made pancakes and french toast and froze and wrapped for 4 or 5 breakfasts.

    we'll stop at Lings and get some grouper to grill. grouper and a nice caesar salad will be a great dinner.

    We have 11 people going this year and 3 of us men love to cook. We will cook breakfast every morning and plan on cooking 5 out of 7 meals. Thanks to the Delta credit card we take 3 full suit cases of food. We plan on pork tenderloin shish kabobs, fresh mahi mahi, fresh ahi tuna, chicken and shrimp kabobs, shrimp and veggie pasta, and lots of shrimp cocktail. The house we rented this year has a big patio and pool in front with a grill and a beautiful Caribbean view. We are staying a 2nd week and plan to eat out then.
