Grouper Seasoning Used - I Must have

Can anyone tell me what they use as the seasoning for the grilled grouper (or pan seared) they had at the Marriott Ocean and Surf Clubs?

It has a reddish color. We would get it every day as either a Caesar Salad with Grouper on top or a grilled grouper sandwich. I don't think it's blackened - cause it was really reddish in color.

Any thoughts? Please - if anyone can help - I'm dying to make it at home?

The blacken season I make is red....its a great recipe if you want it?
Sorry never had it at the Marriott..
