Vinegar, salt, pepper, sugar, Madame Janette or French Bonnet Peppers, pinch of red wine - marinate overnight.
Don't know the actual amounts but I would just say "season to taste".

THen again, maybe he will want to keep his reipe a secret. My brother in law is a chef, and he's always pleased when a customer asks for the recipe and he always refuses.....
