Need some recipes

Just got back Saturday from aruba. The food was the highlite of my trip. Went to so many places can't name all, but I did try alot of local fishes. Wahoo, what a great tasting fish. I thought grouper and snapper was good, you should make it a point to try it. But my question is , I had wahoo at Driftwoods Arubian Style Does any body know what spices they use for pan searing and how to make the creole sauces. And also had the conch on a hot plate. They grilled that and they also used some type of spices. Does any body know what spices? And 1 more question They gave a side dish that looked like a pancake. These were fantastic. Does anybody know the name and recipes for these?
PS. If you get the chance try barracuda. ( any recipes for this fish)

Thanks Andy
