    That whole amount of 15% is not given to the wait staff...it is used by restaurant for incidentals...breaking of plates, etc.
    At least that is what I have been told by several different managers when I asked what the service charge was for....I think many folks assume the wait staff gets the whole amount but they do not. If they break a plate or glass or what ever it is taken out of service charge to cover the amount...sad but true.
    So if you don't leave a tip the waiter/waitress may not be getting any tip at all.

    Well if that's the case, i am sorry than for the waiter but that is just the cost of doing business, ie breaking a glass or plate. And that is something the wait staff needs to take up with management. But that is not the customer's problem and if they add it to the bill, then that is what they get as a tip unless service is exceptional and i add 5% more for 20% which is all you are going to get from me. The restaurants have to understand that although we are tourists, we are not ATM machines

    In North America, service charges tend to be automatically added to the bill on large parties (i.e. 8+ people) or things like catered events. That money DOES go to the waiter when reconciling receipts at the end of the night. But here's the thing: waiters are supposed to distribute tips to bus staff, kitchen, host etc. it's a team effort and everyone is supposed to get a piece. If a waiter claims they don't get the whole thing, they're right and they shouldn't. Anyhoo, that's the way it was when I was waitering in the Dark Ages.

    Any restaurant that automatically applies a service charge, regardless of the size of table, doesn't get our business. Tipping is and should be discretionary.
