Pasta Primavera at Casa Tua, The Villa (owner Ismene is a vegetarian, has some nice dishes on menu), many options at both Taj Mahal and Maharaj (Indian, but do spicy, to mild, to none spicy - to your taste) Taj Mahal has more than 10 different veggie offerings. La Terraza has a Portobello mushroom burger, a mean spinach lasagna and I order my "Alfredo" with extra mushrooms and broccoli for a nice twist.

oh, almost forgot, ask La Terraza for their cabob, without meat: onion, portobello mushroom, red/green pepper, etc. let the chef be creative.

Location: Divi Aruba and Tamarijn, Flying Fishbone, Alhambra casino, anywhere on the beach... especially Baby Beach, Guadirikiri (sp) cave.

veggies
Most all the restaurants will be happy to prepare a veggie dish for you if you let them know. Aruba aims to please everyone they can. That's why they enjoy the highest tourist return rate in the Caribbean.
