We have decided to do a Aruba Destination wedding at the Marriott, but it won't be until Summer 2012, we have plenty of time to plan! My question is, in regards to the packages, who is the photographer? Music? Florist?

I believe, its whoever is available at the time. I think the Marriott works with a group of vendors. I have no idea who did my flowers, I had no choice in my Reverend or the photographer. My photographer was Elathan.

I was given a choice for photographer and officiant, but not florist, and not really DJ. I did not do one of the packages though - we did everything a la carte because we are having around 50 people and I think the packages were for slightly smaller groups.
