Miami/Florida Specialist needed ;-)

We are going back to Aruba to spend Christmas and New Year in our house.
Since I am the only one in the family that has been to Florida, we are going to start with 2-4 days in/around Miami on the way to paradise

. I would very much appriciate some help on what not to miss, when we are there, from "locals" or expert on the area

.
Besides my wife and 2 kids (16,17), we are there with friends with 2 kids (10,11).
For hotels we are looking at Ritz-Carlton Key Biscayne or Loews Miami Beach, but are open for other suggestions. We will rent a car for all of the days.
So far we decided on shopping (of course, we are from Europe

Bass Pro shop, Dolphin Mall and some kind of outlet), some fly fishing for me and my friend and some kind of Everglades excursion, but we need more ideas and options.
So please tell us what to do, eat, drink, see etc.

I can't wait to hear your suggestions.
