Recipes

Everyone likes Macaroni and Cheese here are two. One is easy and the other is difficult. The more difficult one is my favorite and has been since I was a little girl. It also freezes well. Dh does NOT like mac and cheese, I know how could that be? BUT, he does like this one!

Dh is 100% Italian and does most of the cooking in our house. However, this is my recipe and by far one of my favorites. It is easy to make if you are going to be hanging around the house, say on a Saturday.

Play with the ingredients as you please, more or less onion or garlic for starters. Recipe says simmer for at least 4 hours. I like more like 6+ hours of simmering for a thick sauce which breaks down the whole tomatoes.

When making it I usually get out the biggest pot we own and make at LEAST a triple recipe. The sauce freezes very well, remember dh is Italian, so we have an extra freezer. Manga!

Instead of adding the water and dry wine, add 1/2 can of Guinness Beer!
It is a wonderful flavor. We made it last week and our guests went wild over it.
