    ArubaMark, thanks for the Coconut Shrimp recipe!

    ArubaLisa, sounds like you and DH are eating very well!

    PF Chang's has a drink called Poolside made with Curacao. I found the recipe online, but haven't tested it yet.

    I like to use the crockpot to make sweet and sour chicken among other things.

    Sweet and Sour Chicken
    1.5 C sliced carrots
    1 lg green pepper chopped
    1 med onion chopped
    1Tbsp cornstarch
    2.5-3 lbs chicken cut into serving pieces
    8 oz can pineapple chunks in juice
    1/3 C brown sugar
    1/3 C vinegar
    1 Tbsp soy sauce
    1/2 tsp instant chicken bouillon
    1/4 tsp garlic powder
    1/4 tsp ground ginger, or 1/2 tsp freshly grated ginger
    1 tsp salt

    1) Place vegetables in bottom of cooker. Sprinkle with cornstarch. Add chicken.
    2) In separate bowl, combine pineapple, brown sugar, vinegar, soy sauce, bouillon, garlic powder, ginger and salt. Pour over chicken.
    3) Cover. Cook on low 8-10 hours.
    4) Serve over cooked rice.

    I actually cook mine on high, and the chicken comes out so tender. This is so simple, but it goes very fast!

    Ingredients for Steak Marinade I tried.

    1/3 cup soy sauce
    1/2 cup olive oil
    1/3 cup fresh lemon juice
    1/4 cup Worcestershire sauce
    1 1/2 tablespoons garlic powder
    3 tablespoons dried basil
    1 1/2 tablespoons dried parsley flakes
    1 teaspoon ground white pepper
    1/4 teaspoon hot pepper sauce (optional)
    1 teaspoon dried minced garlic (optional)
    Directions

    Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
    Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

    I made this and had doubled the recipe so we would get two nights out of it.

    Well last night we had the leftovers and dh and I came to a very important conclusion.

    EVEN reheated, this is SO much more moist than our traditional way of making meat loaf. THIS even after sitting in the refrigerator and reheating.

    Great chicken recipe

    Chicken Florentine Casserole

    6 chicken breasts boiled and shredded -set aside
    In large bowl mix:
    1 cup mayo
    1 cup sour cream
    1 1/2 sticks melted butter
    2 eggs beaten
    2 cans cream of mushroom soup
    2 cups shredded cheddar cheese (mild or sharp, ur choice)

    2 packs (15 oz) chopped spinach- thawed and well drained.

    Mix all ingredients together and place into a 9x11 Pyrex pan coated with cooking spray.

    Top it with a mix of 1/4 cup seasoned bread crumbs and 1/4 cup parmesan cheese(shaker)

    Bake in a 350 edge o en for 1/2 hour to 45 minutes or until bubbly.
    Serve as side dish or over pasta.....
