Lisa, I made your sloppy joe's last night. They were fabulous! Plan to do the coconut shrimp this week.

Tonight we are having BBQ ribs. They have been marinating in the refrigerator a couple of day.
Dh used to cook them on the grill but was tipped off by a friend that they come out moister baking in the oven at a lower temperature for a longer period of time.
I "think" it is 325 degrees F. for 2- 1/2 hours.

Arrow Ziti and Spinach Casserole

Dh concocted this recipe in his "test" kitchen yesterday. A lot of calories , but yummy, creamy delcious.

Saturday night we entertained company and dh cooked stacks of breaded chicken and eggplant layered alternately with mozzarella cheese and prosciutto (sp?) topping it off with a red sauce.

That is true about the ribs especially if you use an aluminum oven bag by Reynolds. Meat falls right of the bone!

Made the meatloaf with vege recipe off this site last night. Very good!! Where can I find the rib recipe? I am on a roll, enjoying trying new things

Here is ours:

Marinate the ribs in your favorite BBQ sauce in zip lock bag up to a couple of days.
Line a pan with aluminum foil
Place ribs on top of foil and cover witha additional foil. (Do not wrap ribs in foil cause it is too hard to remove the foil)
Bake 325 degrees for about 90 minutes
Uncover, baste as desired, and bake an additional 45 - 60 minutes.
