Many of the biggest improvements are targeted at the airlines' most valued customers — those in first-class and business-class sections.
The airlines value their first/business class passengers more than coach because the fares earn a higher profit than a coach fare and thus benefits their shareholders. Cruise lines are doing the same and offering more amenities for suite class passengers which is fine because you will be paying extra $$$ for it.
No frills coach works for us, we just bring our own snack and beverage. Yeah, call us cheapskates but our food from home is better than the packaged mass market garbage offered. We will gladly let the folks in the front of the plane supplement the cost of our fare.
No frills for us either. In the long run "we" all are going to get there the same way.

We watch like hawks when our bags are being checked in Aruba - ever since the first trip, we've noticed the "attention to detail" by the local check in counters isn't all that great. So I watch everything, tagging, priority tags, sticky tags on the boarding passes etc.
We had an issue on Southwest last year, but I contacted them by email and they went above and beyond to make it right. So I would say if you have a bad experience, it's worth it to send an email. Because of their response to our bad experience, we will definitely fly them again.
We tend to fly American more than others, and just in the last 3 years we've had delayed bags, late flights, and been on an overbooked flight. I don't have much confidence in them, but their price and convenience keeps us going back.
I never thought I would pay the first class price, until we experienced a few upgrades and got to see how much more relaxing the flight is. The airlines have made flying coach such a bad experience that it is easier for me to justify paying for first class sometimes. But that's exactly what I do, I have to "justify" to myself spending that much money and it's a treat when we get to do it. Here's how I do it, I set a budget for our hotel/airfare combined. If I can find a good enough deal on our accommodations, there's more money for the flight. I also look meals, baggage fees, and the occasion. Sometimes I will book one way flights and just do 1st class there, but not home.
