We need to get there one of these years.

Dh makes them at home, but bakes them instead of frying them for obvious reasons.

I've had a few, including stopping at the Pastechi house once. There was very little filling in the ones I've had, I was expecting it to be full and not mostly air inside.

The best pastechi are at the airport, check them out when you are leaving the island. I like the ones filled with ham and cheese .... yummy.

Bully, as Chadd mentioned, are Pastechi supposed to have air in them? A lot of the ones at the Tamarijn in July were nearly empty.

love, love, love pastechi.... A friend of ours from the island stops in for breakfast occasionally and brings them but I am not sure where he gets them... have also had them from the bakery attached to certified (shame on me I forget the name), they also have a bakery in santa cruz...they are great..

I think there would always be an air pocket between the filling and the top crust. As the pastechi cooks, the dough rises and the filling cooks down a bit. The dough sets in the risen position and the filling collapses creating an air pocket.

You can see in the video that the uncooked pastechi start out "packed full".

Bully treated us to pastechis from Bright Bakery. I had one with cheese and my hubby had one with meat. They were both very good. Bully, where is the place at the airport that has the pastechis? Is it in the boarding area?

Chicken ones are best... and everyone I have ever had has a small pocket of air. I think it's an unavoidable consequence of the cooking.
