I just love GOOD FOOD. Aruban, American, Mexican, Greek, Spanish etc. Got a good food Im going.

In other words, it is NOT about "us" the "tourists" it is about what the typical Aruban wants.
The restaurants on the strip in Palm Beach are aimed directly at the tourists, not the locals. If they wanted to target Arubans, they would be located elsewhere on the island.

As long as there are local options, I'm a happy camper. Far be it from me to dictate where others should eat, as I certainly wouldn't want others forcing me into their favorite locations. To quote someone far more intelligent, and humorous than myself:

That said, that part of the island has very little remaining local flavor and could be located on just about any beach in the western hemisphere.

I'm with you there. My wife thought it was ironic that my favorite restaurant in Freeport was the Irish Pub. Although the conch chowder at the Greek joint was outstanding.
