nope i did not do it in layers
i did it in a tube pan
glad your dh's cake came oout nice
tell dd that i thought it was salty too even though i used no salt cashews
maybe i did too uch of a pinch of salt
probably could do without the pinch
i think i may make it this weekend
we are having friends from MA come up for a few days

We adults also thought that night that it was salty. Definitely do not add additional salt to the icing. Shh...between you and I, also think dh may have slipped.

Hi All, Just returned from Aruba. Bought a bottle of "Aruba Ariba" mix at the airport made at Palmero. BUT it doesn't have any directions on the bottle, just says mix with fruit punch. Doesn anyone know how much punch to how much mix? I tried to find a website for Palemero Rum but didn't have much luck. Thought maybe someone here had bought this mix and had figured it out. Thanks for any help.

ARUBA ARIBA
Coecoei (liquor) is one of the major ingredients in making the famous "Aruba Ariba." To make this drink here is the following recipe:
Aruba Ariba Ingredients
1/2 oz. vodka
1/2 oz. 151 rum (better if using Ron Rico from Aruba, higher proof)
1/8 oz Coecoei
1/8 oz Crème de Banana
1/2 cup orange juice
1/2 cup cranberry juice
1/2 cup pineapple juice OR you're favourite "punch drink"
Splash of Grenadine Top with Grand Marnier.
Do not shake, just stir lightly. Top with a "flag" toothpick with cherry and orange.

I've seen the recipe on this site for Aruba Ariba, which was taken from the other webiste www.visitaruba.com "Mix & Shake" section of recipes, but I also came across this article in the "Destination Aruba 2008" magazine you get in the airport...just returned yesterday. Just thought I'd share and also see if anyone had any other versions on the recipe...
"The fabled drink was invented more than 45 years ago by the Head Bartender at Aruba's first resort, the Aruba Caribbean Hotel, the late Mr. Byam. We suggest you got "poco poco" (slowly) with this drink or you may find yourself in a holding pattern over Pittsburgh! This is the original and correct recipe which can be vouched for by the many bartenders who learned the fine art of bartending from Myr. Byam. The Aruba Caribbean Hotel, called locally then and now The Carib, is presently the Radisson Aruba Resort and Casino."
3/4 oz vodka
3/4 oz 151 proof rum
2 oz fruit punch
1/2 oz orange liqueur
1/2 oz banana liqueur
Pour all ingredients into a shaker with ice. Shake and pour into a tall glass. Top with Coecoei, a locally-made anise-based liqueur.
While at the Radisson (one of our fav spots to gamble with Willy & Steve (pit bosses), I leaned into my hubby and said "OH, yes, it's all coming back to me now, reading that article on the plane ride down, I sooooooooo remember ALWAYS feeling really, really good at the Radisson...LOL!!!"
So, that quoted from the magazine, I brought all the local brands back home and DELISH!!! You could be flexible with the "punch" portion to your liking...pineapple, cranberry, fruit punch, grapefruit, OJ or a splash of several for a truly fruity cocktail to your own liking. Enjoy!!!![]()
Just remember if you are off the island of Aruba and going to grab the Coecoei, and find you did not bring any home from Aruba or have run out, you can try substituting Red Granadine.

I know that it has ponche crema and coconut cream and if I'm not wrong als cherry brandy. Can somebody help me with the recipe. Alvast bedankt and sorry for my bad Inglish.
