I always add on at least 5% and up to 10% for outstanding service, and will try to do it in cash whenever possible.

I always used to do the same add 10%. What got me confused was that chalet suise brings you the bill, you see the 15% service charge, you give them your credit card and they bring you the receipt to sign without the itemized food bill. So if you don't remember the gross amount before tax and service charge, you could end up tipping 20% on the total bill that includes the service charge. Twice I dinned there and they brought me the receipt to sign credit charge for the final charge without the food bill. The second time I dinned there, I remembered the amount of the bill prior to service charge so I tipped 10% on that amount which I left in cash..

We usually add an additional 10% regardless if there is already an added service charge or none. That it is if the food and services is good. If not, we settle with the service charge itself.
