A local favorite among all, is the “pastechi”, and belongs to the list of Aruba’s famous local signature dishes. This Caribbean pastry can be filled with Gouda cheese and all types of meats and then fried to perfection

Pastechi

Para acompañar un buen cóctel, tenemos el aperitivo perfecto: el Pastechi.

Polenta.

Ingredients:
1 ½ cups cold water 1 cup cornmeal
1 tsp. salt
½ cup boiling water
 1 tbsp. butter

Directions:
Mix the cold water, cornmeal, and salt in heavy saucepan. Stir in boiling water and butter. Bring to boil and cook for about 3 minutes. Continue cooking for another 3 minutes, while stirring constantly with wooden spoon until mixture is thick. Pour into shallow bowl, turning upside down on plate to provide shape  to the funchi. Cut and serve.

Funchi

Funchi es la propia versión de Aruba de polenta.

Ingredients:
1 lb. Dutch Gouda, sliced 1 large onion, chopped
4 tbsp. butter
2 cups cooked and diced chicken
8 large green stuffed olives, sliced
¼ cup raisins
1 ½ tbsp. minced garlic
1 tbsp. prepared mustard
1⁄2 cup ketchup
1⁄2 tsp. Worcestershire sauce
 1 cup cashews, chopped butter

Directions:
Butter a deep 10-12 –inch baking dish and line with 2/3 of the sliced Gouda. Melt 4 tbsp. of butter in a skillet and add onions until golden brown. Add tomatoes, pickles, green pepper, olives, raisins, garlic, mustard, ketchup, Worcestershire sauce, and cashews. Spread the mixture on top of the Gouda, then cover with the remaining slices of Gouda. Nets the baking dish into a large baking pan and fill with water about halfway up the sides. Bake at 350 degrees for 30 minutes.
