Fish is playing a starring role at the upcoming June edition of the fabulous Culinary Secrets series at Hadicurari Restaurant.
On June 29 and 30, it will be guest chef Valente who will rule the kitchen and whip up the staff to even greater heights. The menu for both evenings is mouthwatering good. Just read it and you know what I mean.
The first appetizer is Dutch herring (Hollandse Nieuwe) with crispy focaccia, onion mousse and red beet foam, followed by a bouillabaise with fresh seafood. Red snapper with beurre blanc, a potato mousseline, cream of green peas and glassworth is the entree. This fabulous dinner is concluded with a dessert called Pineapple and Spices: French toast of brioche, confit of pineapple with star anise and citrus, cinnamon foam and homemade clove ice cream. Oh wow!
